Purpose-Driven Leadership Brings Real Results to Eurest

True leadership doesn’t just support change – it drives it. As President of Eurest’s Eastern Division, Mark H. Maloney is setting a bold standard for how strategic vision, consumer insight, and sustainability come together to shape a better future for people and the planet.

Through his leadership, Mark is driving change, supporting initiatives that create measurable impact, setting clear standards for teams to bring those goals to life and advancing Compass Group and Eurest’s sustainability goals through their work.

Under Mark’s leadership, the Eastern Division recently completed a six-month pilot at Citizens Bank headquarters in Johnston, Rhode Island—one of our most comprehensive studies to date on influencing consumer behavior through menu design and marketing. With the support of client partners, Mark’s team tested how subtle changes—like naming conventions, product swaps, and wellness messaging—could drive guests toward plant-forward meals that support both health and sustainability.

Standout results from the pilot proved just how powerfully language and innovation can shift behavior. Renaming a Mediterranean Veggie Hummus Sandwich to the Smothered Veggie Burrito Wrap more than doubled sales—from 42 to 104 in one month. A blended beef and mushroom burger, rebranded as the Hearty Homestyle Classic, became a top-three seller with a 14% sales increase.

He’s also helped bring leading voices to the table. In partnership with former White House chef and Senior Policy Advisor for Nutrition Sam Kass, Mark’s team explored how Eurest can shape the food system more broadly—finding new ways to reduce emissions, empower guests, and spark real change at scale.

Mark’s leadership also creates space for every team member to understand their role in driving meaningful change. Through thoughtful training and ongoing communication, he helps ensure that sustainability goals feel clear, achievable, and connected to the everyday work happening across teams.
